The course “Good home-made pizza cooked in a wood-fired oven” will be held on Monday, May 21st, a project conceived by Chef Gaetano Manganelli in collaboration with Forni Pavesi Rimini.
The course, which is aimed at all pizza lovers and amateur chefs, includes a theoretical and practical lesson and finally a tasting session to prepare a homemade pizza which will then be cooked in a wood-fired oven.
In the 4 hours of the course the secrets for the preparation of highly digestible pizza will be revealed: the classic one with type 1 and 2 flour and the stretched one with the Roman, high hydration.
“ There is a huge difference between an electric oven and a wood-burning oven! The scent is not the same, the taste changes, the pizza cooked in a wood-fired oven remains crispy outside and soft inside, while the electric oven dries out “, said Gaetano Manganelli, 35, originally from Conversano in the province of Bari, in Rimini and surroundings since 2000.
Manganelli takes his first steps in the Universe Pizza at only 14 years of age and since then he has traveled on pizzas and has prepared and cooked them, always in wood-fired ovens of course, up to becoming Instructor in the Pizzaioli Training School Rimini and , to refine the passion and make it Gourmet, Pizza Chef.
Manganelli for years has been using and recommending the Pavesi Rimini ovens of which he appreciates the technical characteristics of construction and the yield “ High quality materials and coating interior that allow the maintenance of constant heat and to obtain excellent pizzas in full respect of the Neapolitan tradition “.
Among the awards won by the Chef, a first place taste and quality at the Carmelo Calabrese Trophy, a second place at the Pizza Talent show, and a third place at Pizza senza frontiere. Excellent results obtained by Gaetano Manganelli also in the races held in Germany and France.
