The pizza is a delight for the palate always, in any season! The consumption of pizza remains unchanged at any time of the year, what changes is the type of filling.
It is difficult to resist the temptation and the smell of a steaming pizza and this does not only apply to us Italians, but also to the millions of foreigners who „invade“ our country and the hundreds of thousands of our coast during the summer.
If in winter the „sausage and onion“, „the mushrooms and ham“, „the parmigiana“, to name just a few, they represent a pleasant refrain for the waiters of the pizzerias, in summer the requests for pizzas with this type of fillings decrease for leave the way for fresher flavors that are better suited to the climate.
To put it plainly, it is true: there are typically summer pizzas, „lighter“ than the classic ones, on which many delicious made in Italy products cleverly combined with pizzaioli and pizza chef make a fine show: small and red Sicilian tomatoes, fresh leaves of basil, seasonal grilled vegetables, various types of pesto from the Genoese to the Sicilian, buffalo mozzarella, burrrata and Apulian stracciatelle, anchovies and zucchini flowers, swordfish carpaccios, strips of salmon and chives, ham and figs, grains of pistachio, fresh oregano and capers from Pantelleria … there’s something for everyone!
So many are the requests and the many variants proposed during the summer also white and marinating (both are well suited to those with food intolerances and digestive disorders).
